Tiina and Donald Polvere, Jr.
Tiina Polvere has an extensive background in the food and dessert business, including education at the Culinary Institute of America, the New York Cooking School, and Le Cordon Bleu in Paris. Upon her return from Paris, Tiina worked as Pastry Chef at Soho Charcutere in New York City which allowed her to embrace the French aesthetic and skills. While in New York, she also worked at Truffles Chocolatier, Dino D. Laurentis Foodworks Restaurant, and The Trump Tower.
She has been working on Nantucket as pastry chef and baker in various restaurants since 1980, including the Second Story, Dockside, Morning Glory Cafe, the Gilded Pizza and the Seagrille. She began making custom-made wedding, birthday and other special occasion cakes for friends and founded Nantucket Cake Company in 1984. Tiina is now on her second generation of wedding cake customers.
